I've watched youtube videos about the game, and, from what I can see, it's horrible! (didn't play it, might be wrong in some things. I'll install the game, see for myself and make another post)

The gameplay is completely changed. Doesn't even look like the older titles.
The classic sun system was removed and the Sunflower is no longer plantable. Instead you have this... I dunno, the Elixir system form Crash Royale, the AP system from Metal Slug Attack... the game looks less unique for me!
The removal of the Lawnmowers.... well, I never even let the zombies touch them most of the time, but they were helpful sometimes. Very Helpful...
The way the Plant Food works in this game is... okay-ish. While I personally prefer the PvZ2 Plant Food system, in PvZ3, you won't have to rely on the zombie behind the entire horde.
The Taco Time and Tacobility... again, ok. I really wanted a power up like the Tacobility to be added, but I think the Taco Time was unnecessary.
The problem of Tacobility is that, because of the way it works, some of the "better plants" were turned into an upgrade! (like in PvZ1, but worse)! I can't make a whole column of Repeaters or Winter-Melons, because I only get a few Tacos!!!
And speaking of the better plants, the Cherry Bomb was turned into a Power Up! Why? It was fine as a plant! Why change it to a power up!?

Now, to the artwork. This is more of a personal opinion, and my opinion is that they're not very good. Some plants and zombies look horrible in 3D. (Like, what the heck happened to Garlic?!!) Not saying that "everything" looks horrible. Like the Bonk-Choy and Peashooter look good, and I like the zombies death animation... But even then, if I had to choose between PvZ2 art-style or PvZ3 art-style I'd choose PvZ2.

There are many more thing I would complain about, but, as I mentioned, it's not from personal experience. I'll install the game... aaand it's incompatible with my Phone... Ok, I'll use bluestacks then.... aaand It's still unavailable in my country... *sighs in saltiness*
