But they had gimmicks and made you use them to succeed...

Blover: waves of flying Zombies

Grave Buster: Gravestones

E.M. Peach: Machines

Umbrella Leaf: Slingshots? (I really don't think i'd need it, TOTAL waste of one precious seed slot)

You could go without it if you want, it'd just be much harder. Kinda like the other plants I mentioned. Also, you're forgetting they'd counter thrown imps, octopi and other lobbed attacks.
