Here's my idea for UL's return:

Umbrella Leaf

Sun cost: 175

Recharge: Fast

Health: 80

In addition to deflecting the obvious objects (octos, bones, fish hooks, lost pilot zombie, snowballs, jester returned projectiles) UL also protects plants from world gimmicks with thick leaves roots in a 3X3 area around it. For example, in Pirate seas and BWB, UL's roots provide a platform on water allowing us to plant on water. In FB, UL's leaves protect plants on freezing winds. In NMT, UL's leaves block sound, so zombies in a 3X3 around it won't have thier jam abilities. However, be careful when using UL in Wild West for the roots will cover the minecarts.

PF: Roots grow to protect a 3X5 area and give plants protection, increasing their health by 25 bites.

Special 1: Wizards can only turn individual UL leaves to sheep. UL has 8 leaves, so basically it can withstand 8 hits from wizards before the whole plant turns into sheep.

Special 2: Planting torchwood next to UL will light UL on fire (but like torchwood UL never burns down completely). A burning UL will do 1 damage per second around it. Planting a napalm torchwood next to UL will double that damage.

Special 3: Tossed imps, swashbucklers, prospectors, and relic hunters will be bounced backwards. These zombies will be bounced to the tile two spaces in front of UL. 

Special 4: Thick roots will anchor plants, making immune to Punks, Mecha Football Zombies, Fisherman, and graves (which somtimes bounce plants off tiles.)
