I have always thought it would be cool if there was some sort of sandbox mode where you get to test plants as long as you own them and summon zombies as you please as long as you have encountered them, sort of like a test lab. Another idea is a level editor where you can choose zombies that come on a level then you can place mould, flowers, endangered plants, power/gold tiles and sliders and set restrictions like "dont spend more than x amount of sun". I dont know, just seems like an amazing idea to me
