I used Wall-Knight and stocked up on a full set of Potato Mines and defensive nuts.  They held the line against that huge opening wave of cheap heavy hitters until the Smackademias and strikethrough plants were called in.  The Valkyries were killed with Shamrockets.  After you get through that huge wave, it gets much easier, he doesn't have much to follow up with unless he gets really lucky with Eureka. (in my case, I used a heal/Pepper MD combo and brought in Tough Beets which all proceeded to beat him and his remaining fodder to death).
