Note that while my plants and zombies will be in their proper order, I will skip some of them to do other ones, but I will hopefully add all of them in the end. I will naturally skip things that don't need re-balancing. Note that this is incomplete.

Sunflower
Produces 300 sun when fed with Plant Food
Wall-nut
Potato Mine
Destroys blocks in a 3x3 area around it when it explodes
Bloomerang
Iceberg Lettuce
Freezes Frostbite Caves zombies for half the length of other zombie types
Immune to frost
May be planted on beach water
Chills zombies for 10 seconds after freezing
Grave Buster
Twin Sunflower
Costs 100 sun
Fast recharge
Produces 600 sun when fed with Plant Food
Snow Pea

Immune to frost and heats plants
I might also round out its range and damage, but that'd likely make it a bit OP, and I want to keep it at 150 sun.

Killed zombies are invincible and plants don't attempt to attack them

Eats everything whole except for Gargantuars and Zombots; doesn't chew on graves, but instantly destroys them
Ghost Pepper
100% invincible to everything except shovels (when not exploding)
Cannot be dug up when exploding
Attacks further to the left (as much as it does to the right)
Costs 100 sun
Guacodile
Immune to frost and heats plants, so as to prevent accidental triggers
Hurrikale
Pushes back zombies all the way
Pushes back storm ambushes
Blows away all midair zombie types
Pepper-pult
Fast recharge
Splash damage does 1.25 normal damage shots
Lava Guava
Zombies no longer attempt to destroy it or succeed in doing so (if triggered)
Deals 22.5 normal damage shots when it erupts
Toadstool
Eats everything whole except for Gargantuars and Zombots; doesn't chew on graves, but instantly destroys them
Gold Leaf
Usable in all worlds
Slow recharge speed
Electric Blueberry
Keeps created clouds until a zombie arrives
Attacks zombies based on how close it is to the plant in question; if zombies are in the same location, it attacks by health, high to low
Garlic
Takes 21 normal damage attacks to die
Fast recharge
Grapeshot
Costs 200 sun
Explosion is not fiery
Cold Snapdragon
Deals 1 normal damage shot per attack
Deals 60 normal damage shots with Plant Food
