Here are some of mine.

Sunny with a chance of Gargantuar (Meduim): Plant a Sunflower next to a Gargantuar and let him smash it!

Boom! Goes the Imp (Hard) : Have a Gargantuar throw an Imp at a Potato Mine (It must be armed)

Winter Wonderland (Medium/Hard) : Complete any kind of level only planting Snow Peas, Ice-shrooms, Coffee Beans, Melon-pults, and/or Winter Melons.
