Ice-shroom is a minor recurring character within the Plants vs. Zombies franchise. In all of his appearances he is able to freeze or chill a large number of zombies within a specific area.
As of Plants vs. Zombies 3, Ice-shroom has appeared in three games.
Origins
The "ice" in his name refers to the fact that he freezes zombies with ice and the "shroom" in his name refers to the fact that he is a mushroom.
While the exact type of mushroom Ice-shroom is based on is never made clear, judging by his color and flat cap, Ice-shroom resembles the aniseed toadstool (Clitocybe odora), a blue-green mushroom that grows near deciduous and coniferous trees.
History
Plants vs. Zombies

Ice-shroom's first appearance in the series is in the original Plants vs. Zombies as well as all Chinese spin-off games based on it, where he was the penultimate plant obtained in the Night area.
Ice-shroom explodes almost as soon as its planted, freezing all zombies on the screen for a little over three seconds. Zombies are also chilled for a short while after unfreezing, moving half as fast as long as they are not attacked by any fire attacks, which thaws them out. Ice-shroom will also deal 20 damage to all zombies on screen, the same amount of damage as Peashooter's peas.
Due to being a mushroom, Ice-shroom is nocturnal and a Coffee Bean must be planted over him in order to wake him up and use him in day levels. An added benefit to this is that it allows the player to stock up on Ice-shrooms by planting multiple on the lawn at once, as Ice-shroom cannot explode unless awake.
Zomboni and Balloon Zombie are the only zombies that cannot be frozen by Ice-shroom, the former due to riding a machine built to be resistant to cold temperatures, and the latter being a flying zombie and thus is unable to be frozen to the floor.
Garden Warfare series

In the third person games, Plants vs. Zombies: Garden Warfare and Plants vs. Zombies: Garden Warfare 2, Ice-shroom appears as a Spawnable Potted plant. Ice-shroom still freezes enemy zombies, but rather than exploding like he does in the first game, he simply sneezes in front of himself to freeze zombies before hiding for a few seconds to recharge his attack.
In the first Garden Warfare games, it has an exclusive variant named the Snow-shroom, a Ice-shroom with a smiling face made out of coal for the eyes and mouth and a carrot for a nose in order to resemble a snowman, it is tied to the recurring Feastivus event. This variant is identical to the original Ice-shroom in function and merely serves as an event specific re-skin.
Plants vs. Zombies 2

Ice-shroom's latest reappearance is in Plants vs. Zombies 2 as a seed packet unlockable premium plant. Ice-shroom has received an incredibly massive rework from the original game.
Ice-shroom is now a short range plant who attacks zombies by summoning ice spikes underneath all zombies in the tile ahead of it, these spikes damage and zombies they attack. Ice-shroom now also generates an ice aura around himself that both chills zombies that enter it and grants a damage boost to any Winter-mint family plant within it.
The reason for Ice-shroom's massive rework is due to a previously introduced plant, Ice Bloom, already having Ice-shroom's previous ability of freezing all zombies on screen. Ice Bloom however has an additional ability to encase any weakened zombies in a 3x3 area around her in ice, which makes them act as zombie stalling barriers.

Trivia
- Ice-shroom was considered for addition in the ill-fated Chinese exclusive turn-based game Plants vs. Zombies: All Stars, and had actually been developed far enough to have an evolution line based on him with two pre-evolutions planned. While no designs for the pre-evolutions exist, they are referred to in the code of the game. It is not concretely known why Ice-shroom and his evolution line were scrapped.
