Winter Melon is a recurring character within the Plants vs. Zombies franchise. Like Melon-pult, he lobs watermelons that deal massive damage to zombies, along with splash damage that can avoid zombie shields. Unlike Melon-pult however, his watermelons also chill zombies, making them slower.
Almanac entries depict Winter Melon as rather worrisome, particularly in regards to the numerous zombie attacks that occur throughout the series and the safety of both his life and others. Winter Melon is also shown to be an accomplished vocalist, doing voice work for multiple ice-themed documentaries.
As of Plants vs. Zombies 3, Winter Melon has appeared in five games with a handful of appearances in Chinese spin-offs.
Origins
Like Melon-pult, Winter Melon's shape and projectile is based on the fruit of the watermelon (Citrullus lanatus), a type of melon from Africa.
His name is a pun on "winter melon", the alternative name for the wax gourd (Benincasa hispida) referring to Winter Melon's ability to chill zombies with his frozen melons.
History
Plants vs. Zombies

In the original Plants vs. Zombies game, as well as all Chinese spin-off games based on it, Winter Melon is one of the last three plants obtainable at Crazy Dave's Twiddydinkies, buyable after beating Adventure Mode, costing $10,000 to obtain.
He costs 200 sun to plant, serving as an upgrade to Melon-pult. His rate of fire, normal damage, and splash damage are all the exact same as Melon-pult, simply having a chill effect like Snow Pea and Ice-shroom added to the attack, making him extremely useful in modes such as Survival: Endless.
He has an Achievement related to him, Melon-y Lane, which requires one Winter Melon to be planted in every lane. This achievement can easily be done by just planting 6 Melon-pults, 2 Lily Pads, and then 6 Winter Melons on the Melon-pults in Last Stand, as the achievement is unlocked even if the level isn't cleared.
Plants vs. Zombies 2

Winter Melon returns in Plants vs. Zombies 2, this time as his own separate plant. Unlocked after beating Wild West - Day 24, he once again serves the same purpose as the first game, acting like Melon-pult with a slowing effect. Due to not needing Melon-pult to be planted, he now costs 500 sun, the same total he overall costed in the first game.
Unlike most lobbing plants, Winter Melon is not a member of the Arma-mint family, and instead is a member of the Winter-mint family. His Plant Food ability, like Melon-pult, releases a barrage of frozen melons at every zombie of the screen, dealing 200 damage and 20 splash damage per melon.
Plants vs. Zombies: All Stars (China only) (Archived content)

Winter Melon made a return in the Chinese-exclusive turn-based game Plants vs. Zombies: All Stars as the last plant in the Watermelon line, evolving from Melon Slice-pult and Melon-pult. Like the mainline games, he attacked by lobbing frozen watermelons at zombies.
His active ability was Melon Scatter, which dealt damage to three random enemies with a chance to freeze them for 2 turns, as well as extinguishing flames while his passive abilities were Cooling Down, which let Melon Scatter deal 310 more damage and slow zombies down by 50, and Fireproofed, which granted Winter Melon +114 attack and immunity to being burnt.
His soulmates were members of the Nut line for a damage boost, members of the Corn line for a critical chance boost, and members of the Doom line and Tree line together for a damage boost.
Plants vs. Zombies Heroes

Winter Melon appears next in the turn-based mobile card game Plants vs. Zombies Heroes as a Premium Legendary in the 
Smarty class. He costs 6

and Splash Damage 4, and is a member of the Fruit tribe.
His ability, similar to Snow Pea, 
Freezes any zombie that gets damaged by him. This includes zombies damaged by Winter Melon's splash damage, and not just the one in his lane.
Interestingly enough, Winter Melon was added before Melon-Pult was, the latter only being added during Galactic Gardens. This is the only time Winter Melon was added first and Heroes used to be the only game that had Winter Melon but not Melon-Pult as a result.
Plants vs. Zombies 3

Winter Melon's latest appearance is in the pre-2021 version of Plants vs. Zombies 3, where he appears as the Tacobility to Melon-Pult. He retains his properties where he chills and slows down the zombies he hits.
Talkweb mini-games
In Plants vs. Zombies 2: Summon, he's the 21st plant to be unlocked, having a 8% chance of freezing his target for 1 second. He deals 9226K points of damage.
