Bun Chi
Bun Chi is a plant in Plants vs. Zombies 2 first introduced in the 10.2.1 update for the Bun Chi's Thunderous Arena Season. It attacks zombies by attacking them with its ears, slapping them four times before finishing with a clapping attack which knocks its target back.
Each time Bun Chi does this attack sequence, its next attack sequence will be upgraded and deal more damage, capping off at the fifth consecutive attack sequence. After five consecutive attack sequences, Bun Chi will be able to deal a high damaging "Thunder Clap" attack which is activated by tapping on it.
Bun Chi's Thunder Clap attack deals damage in a 3x3 area as well as knocking all effected zombies back further than its normal attack and reducing the attack damage of zombies to 20% of the original for 18 seconds. If Bun Chi is left idling too long, it will revert back to its base statistics and will need to recharge all of its attack upgrades.
Origins
The exact plant Bun Chi is based on is never explicitly stated in-game. However, based on its appearance and theming, Bun Chi heavily resembles a bunny ears cactus (Opuntia microdasys), a species of cactus native to central and northern Mexico named after its resemblance to a cartoon rabbit head.

Strategies
Bun Chi, being a knockback plant, relies on the same strategies as most other knockback plants. Use stallers like Sap-fling to reduce the distance zombies can cover between knockbacks. Preferably use freeze or butter over stun, as most forms of knockback (including Bun Chi's) will cancel stun on hit, but not the former two. Additionally, Draftodill can apply its slowdown affect to zombies Bun Chi knocks back, as the game considers them airborne. It can even blow them off screen if their projectile makes contact with the zombie in this state, though Blover can accomplish this far more reliably and against multiple zombies at once.
A strong aspect of Bun Chi's is the manually activated thunderclap. This provides a large burst of knockback to many zombies at once, being potent enough to suppress entire swaths of zombies in even dense endless levels or maximum difficulty pursuit levels. However, this will take some time to build up, so building a sustainable defense that can reliably hold zombies back long enough for the next thunderclap to be ready is crucial. The auto attack on Bun Chi itself can actually be a huge help in this regard, as the knockback at the end of its combos is strong enough to hold a low density of zombies back. However, this can only effect a single target at a time, so making sure to thin out the crowd for Bun Chi's automatic knockback to better hold back the zombies that can reach it will often prove absolutely necessary to utilizing Bun Chi to its fullest.
An important thing of note is that the knockback will not work against Gargantuars or Mechs. As such, it may be a good idea to use Imp Pear's plant food effect to transform them into zombies that can be knocked back.
